Disney Springs is the Food and Shopping Center of Disney. They have street entertainers and cars that drive into the lagoon for an evening stroll on the water. Jock Lindsey’s is a cozy little bar. Make your own Mini Figure Lego Character at the Lego Store, Splitsville Bowling, Watch glassblowing, Decorate a cake, Cirque du Soleil show (don't buy expensive tickets), ride amphicar, ride in a hot air balloon (8 minutes), CoCa-Cola Taste Testing. Note the bus transportation is in the middle. Ride Share like Lyft and Uber are on the ends.
The BoardWalk has good nightlife. Starting an evening at the excellent Flying Fish Cafe and concluding the night at Jellyrolls (dueling) piano bar with stops to see the boardwalk entertainers along the way is a great way to spend an evening. Abracada Bar is their newest place to stop for a drink. Or dance the night away at a dance hall. For family friendly evening, you can also see the nightly Epcot fireworks, Illuminations, without going into the park. Also, there are street performers, bike rentals, ice cream window and movie.
We go to this every time we go to Disney World. Slap Stick Comedy, Great food and alcohol included.

Bailey has done the learning to surf. It was an early morning to get over there to do it. But, well worth the experience. But, the way they do it today, you have to bring your surf board with you.
